For audio, use Dolby/AC3 compression if you have more than 20 minutes but tweak the default setting. Larry says to turn off dialog normalization, which ends up lowering the volume on your sound. To do this set dialog normalization to -31. Also turn off the preprocessing by setting it to none. Larry shows you how to do this in the video and also gives a general overview on choosing your settings for compressing for DVD.
